🍋✨ Lemon Pasta with Mint (My Comfort Bowl)
A light and refreshing pasta dish that combines the zesty flavor of lemon with the creamy richness of parmesan. Perfect for a cozy dinner or an elegant lunch.

Ingredients:
- Spaghetti
- Salt
- Zest of 1 yellow lemon
- Juice of 1–2 lemons (depending on size & taste)
- Olive oil
- Fresh mint or basil (I used mint 🌿)
- Grated Parmesan cheese

Instructions:
- Boil the pasta:
In a pot of boiling water with a good amount of salt, cook the spaghetti until halfway cooked (just before al dente). - Prepare the lemon base:
In a pan, add olive oil and lemon zest. Let it warm slightly to release the aroma.
Pour in half of the lemon juice and add chopped mint. Stir gently. - Enhance the flavor:
Take the leftover lemon halves (after squeezing) and place them in the pan. Move them around in circular motions to boost the lemon flavor.
After a minute, remove the lemon halves. - Combine pasta & sauce:
Add the half-cooked spaghetti to the pan. Pour in about 2 cups of the pasta water.
Add the rest of the lemon juice, and a generous amount of grated Parmesan.
Let everything cook together until the sauce thickens and the pasta is perfectly cooked.
The texture should be creamy but not watery – just a light coating of sauce. - Serve & garnish:
Plate the pasta while warm. Top with more Parmesan and fresh mint leaves.
Serve immediately and enjoy the fresh, zesty vibes!
